This simple, quick and healthy vegetarian kale curry recipe is perfect for busy weeknights! Kale tastes amazing and in this recipe we combine it with spinach for a rich dish full of sweet, aromatic spices.

Serves 4

Ingredients:

2 tbsp avocado/coconut oil 1 onion, finely chopped 1 tbsp grated fresh ginger 2 cloves garlic, grated
1 tbsp cumin seeds
2 tsp garam masala
1 tbsp curry powder
1 red or green chilli, finely chopped
300g halloumi cheese, cubed
300g kale leaves
3 tamatoes, seeded and chopped
200g baby spinach leaves ¾ cup cream
(dairy or plant-based)

Directions:

1. Heat the oil in a pan, add the onion, ginger, garlic, spices and chilli and cook until onion soft.

2. Add the cheese and cook briefly on each side until golden, then add the tomato and simmer for 2-3 min. Set aside.

3. In another pot, cook the kale with a little water until softened, drain very well, then place in blender with the spinach and blitz until smooth.

4. Add the kale and spinach to the cheese mixture, pour in the cream and simmer gently for about 4 min.
